Basil Pesto Pasta

Our basil pesto is a simply delicious meal to add to your dinner repertoire. We love using basil and pine nuts; however, you can easily substitute basil for another green, like spinach, and swap out the pine nuts for walnuts, almonds or cashews to mix things up.

Serves 3-4 (depends on how willing you are to share)

Preparation Time: 20 minutes

Ingredients

  • 375g linguine or spaghetti
  • 80g fresh basil leaves, stems removed
  • 30g pine nuts, toasted
  • 1 garlic clove, crushed
  • 60g grated parmesan cheese
  • 1/4 cup Goldi Smooth EVOO
  • Salt and pepper, to season

Method

Step 1

Cook the pasta (4-5 minutes if fresh, or according to the package). Drain.

Step 2

Meanwhile, make the pesto by pulsing the rest of the ingredients in a food processor until well combined.

Step 3

Mix the pesto into the drained pasta (while still warm).

Step 4

Drizzle with a little extra Punchy and parmesan cheese. Voilà!
