Easy Peasy Olive Squeezy Kale Salad
This kale salad is an easy-to-prepare nutritious treat. We love this high fibre meal for lunch or as a side during dinner. The best part is it can be prepared in under 10 minutes!
Serves 1 as a main, or 2 as sides
Preparation Time: 10 minutes
- 1 bunch of Tuscan kale
- ¼ cup cranberries
- ¼ cup walnuts, chopped small
- 2 medium tomatoes, sliced
- 1 medium avocado, sliced
- 2 Tbsp hemp seeds (or seeds of your choice)
- ¼ cup marinated olives (optional)
- Juice from 1 lemon
- Himalayan pink salt, to taste
- 2 Tbsp Goldi Punchy EVOO
- Boiling water + 1 tsp kosher salt
Remove the kale leaves from the stems. Roughly chop the leaves. Meanwhile, boil water in a pan with 1 tsp kosher salt (include enough water to cover the kale leaves).
Blanch the kale for 1-3 minutes. When the kale is at your desired taste, remove from heat and strain. Tip: Allow the kale time to cool before mixing with the other ingredients, ensuring it is not too wet.
In a large mixing bowl, combine cranberries, walnuts, tomatoes, hemp seeds, olives, kale, lemon juice and olive oil. Mix well with hands.
Finally, add the sliced avocado and salt to your desired amount. Enjoy!
