Pear and ginger loaf

What could be better than a piece of cake and a cuppa with a friend. This cake brings fruit and spice together to make a simply delicious afternoon treat.

Serves 8

Preparation and cooking Time: 2-2 1/2 hours


  • 200 ml Smooth EVOO
  • 150g caster sugar
  • 300g golden syrup
  • 200ml Smooth extra virgin olive oil
  • 2 eggs
  • 60g fresh ginger
  • 180ml Hot water
  • 2 tablespoon hot water
  • 2 teaspoons baking powder
  • 340g plain flour
  • ½ teaspoon hot water
  • 1 teaspoon finely grated orange zest
  • 3-5 small pears


You can use a load or standard round tin for this cake

Step 1

Preheat the oven to 180 degrees celsiuson fan force.

Step 2

Combine the sugar, golden syrup and EVOO into a large bowl. Lightly beat the eggs together and stir the sugar and oil mixture into the bowl.

Step 3

Peel and finely grate the ginger.

Step 4

In a small bowl, mix the hot water with the baking powder

Step 5

Sift the flour and cinnamon into another bowl

Step 6

Stir all the ingredients together except the pears and leave to rest for 10 minutes

Step 7

Line cake tin with baking paper. Put in cake mix then. Add the pears to the centre of the loaf tin or evenly through a round tin.

Step 8

Bake for 1-½ hours until a skewer inserted into the centre of the cake comes out clean.

Pair with cream and a good cup of tea.
